100% bamboo sheets have always been my favorite. They're soft, silky, and offer temperature regulation, so you don't sleep hot or sweaty.
They are really lovely softness-wise and they're really lightweight which I adore since I sleep hot.
The most cooling bedding is supposed to be made from bamboo rayon, and that is what I use.
I also have a set of rayon sheets from 100% bamboo and they feel like cheap microfiber garbage. Very plasticy and sticky.
